Description
The Cheesehouse at Gileston Manor is a 17th century rectangular one-and-a-half storey building constructed with base battered walls made of random local lias limestone rubble and topped with Welsh slate roofs. It features a single storey addition on the east gable. The central entrance consists of a plank door flanked by five small paned windows arranged in a 3 x 3 pattern, all with voussoir heads. The attic includes two gabled wall dormers, each with 3 + 3 vertical strip casements. A kiln stack is located on the right gable, which also has coped gables. Adjacent to the main structure is a small addition, possibly a bakehouse or laundry, separated by a straight joint. This addition is built of squared stones, some of which are re-used 16th century stones, and features a doorway with a segmental head that appears to incorporate chamfered 16th century door jambs, possibly from the main house. There is also a small 3 + 3 pane casement to the right and a low pitch roof with a chimney on the gable. The gable and rear elevations are blind, although there is a blocked window in the east gable.
Inside the main building, the ground floor retains two cheese presses and associated equipment on the left, along with a stone-built corn drying kiln on the right. The upper floor contains cheese maturing racks that are now used for apple storage. The ground floor is divided into four bays with chamfered main beams. The roof structure consists of principal rafters with butt purlins and a ridgepiece. Additionally, there is a cellar featuring a segmental vaulted roof and a central drainage channel. The attached bakehouse or laundry was not observed during the resurvey.
